Sock It To Me Cake


Sock It To Me Cake


Cake
2 sticks butter, softened
2 cups sugar
1 cup sour cream
6 eggs
3 cups flour
1/4 tsp. baking soda
1/4 tsp. salt
1 Tbsp. vanilla

Filling
3/4 cup brown sugar
1 cup chopped nuts
2 tsp. cinnamon
1 tsp. ginger
1 stick butter, softened

Glaze
1 1/2 cups powdered sugar
2 Tbsp. milk
1 Tbsp. vanilla
1 Tbsp. lemon juice

1.  Preheat oven to 350 degrees.  Grease and flour a large bundt pan or an angel food pan.
2.  Sift together flour, baking soda and salt.  Set aside.
3.  Mix together filling ingredients.  Set aside.
4.  Whip sugar and butter until light and fluffy.  Add egg - 1 at a time, mixing well after each.
5.  Mix in sour cream and vanilla.  Add flour, mixing just until blended. Do not overmix.
6.  Spoon half the batter into the prepared pan.  Spoon filling around the center.
7.  Spoon remaining batter on top, making sure the filling doesn't seep out.
8.  Set the cake pan on a cookie sheet.  Bake for 1 hour to 1 hour 15 minutes.  Start checking at 35 minutes.  It's done when a toothpick comes out clean.
9.  Cool on rack for 15 minutes. Then, turn out onto a serving plate; cool completely.
10.  Meanwhile, mix up the glaze and when the cake is cool, drizzle it over the top.

Have you ever bought one of these at the store? They're okay. But, they're always better when you make your own.

Nutella Loaf Cake


Nutella Bundt Cake


3 1/2 cups flour
5 tsp. baking powder
1/2 tsp. salt
2 cup butter, softened
4 cups sugar
8 eggs
2 cup Nutella
2 cup milk

1.  Preheat oven to 350 degrees. Grease and flour 4 loaf pans (9 x 5-inch) or 2 bundt pans.
2.  Combine flour, baking powder and salt. Set aside.
3.  In mixer bowl, combine butter and sugar. Beat well.
4.  Add eggs (one at a time) and then the Nutella. Beat until fluffy.
5.  Mix in flour and milk. Mix just to combine.  Batter will be very thick.
6.  Divide between the loaf pans, filling just 3/4 full or spread into the bundt pans. Bake for 45-55 minutes. Test with a toothpick. It'll come out clean.
7.  Cool on a wire rack for 10 minutes and then turn out of pan to cool completely.



I made the bundt cakes and covered them with chocolate icing. I used Hershey's Dark Chocolate icing and it was wonderful! Normally, I would make my own.

Banana Cream Pie


Banana Cream Pie


1 baked 9 inch pie shell 
3/4 cup sugar
1/3 cup flour
1/4 tsp. salt
2 cups milk
3 egg yolks
2 Tbsp. butter
1 tsp. vanilla
4 good-sized firm bananas

1. In saucepan, combine sugar, flour, salt & milk.
Cook and stir over medium heat until it boils. Cook for 2 minutes. Remove from heat.
2. Mix in the egg yolks. Cook for 2 more minutes. Remove from heat.
3. Add butter and vanilla.  Cool.
Slice half the bananas over bottom of pie crust.
Pour half the pudding on top. Repeat layers.
Top with meringue or whipped cream. Refrigerate.

This is the recipe my Grandmother would always make. 

Deep Dish Oatmeal Fudge Bars



Deep Dish Oatmeal Fudge Bars


1 cup butter
2 eggs
2 cups brown sugar
1/3 cup milk
2 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
3 cups oatmeal

Filling
1 cup Eagle Brand sweetened condensed milk
1/3 cup butter
1 tsp. vanilla
2 cups chocolate chips

1.  Put all the filling ingredients in saucepan and melt over medium heat. Set aside to cool.
2.  Stir together flour, baking soda, salt and oatmeal. Set aside.
3.  Mix butter, eggs and brown sugar. Add vanilla and milk. Slowly add the dry ingredients.
4.  Grease a 13 x 9 inch pan. Spread 3/4 of the oatmeal mixture in the pan. Now, pour the chocolate mixture on top and spread to cover.  Now, drop spoonfuls of oatmeal mixture on top and try to spread. It won't cover, but it'll spread somewhat when it cooks.
5.  Let set while preheating the oven to 350 degrees. Bake for 25 minutes. Cover with foil for the last 5 minutes if it looks like it's getting too brown.
6.  Cool on rack. Cool completely before cutting or the chocolate will all ooze out.

Guinness Chocolate Cake


Guinness Chocolate Cake

2 1/2 cups flour
2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 1/2 sticks butter
1 bottle Guiness Stout
3/4 cup cocoa powder
1/2 cup sugar
1/2 cup brown sugar
1/2 cup sour cream
2 eggs

1.  Preheat oven to 350 degrees. Grease and flour a bundt pan.

2.  In mixer bowl, mix flour, baking soda, baking powder and salt; set aside.

3.  In saucepan, mix sugars, cocoa, butter and Guiness. Bring to a boil. Keep an eye on it because it'll boil over really quick.  Cool.  Add sour cream and eggs. Mix well.

4.  Add the cocoa mixture to the dry ingredients. Mix on low until just mixed together. Pour into the bundt pan and bake for 45 minutes or until a toothpick inserted in center comes out clean.  Let rest for 15 minutes before turning onto a rack to cool completely.

Icing

1 1/2 bricks (12 ounces) cream cheese
1 stick butter, softened
1/2 Tbsp. vanilla
1/4 tsp. salt
3 cups powdered sugar

Beat together cream cheese and butter until fluffy.
Add vanilla and salt.
On low, mix in powdered sugar. Beat well to combine.


**I didn't put the icing on mine and I wish I had because it was a bit dry although it tasted great!
